Cherry Dump Cake

Standard
  • 2 sticks butter, melted
  • 1 box yellow cake mix
  • 1 can cherry pie filling
  • 1 handful sugar
  • 1 lrg can crushed pineapple in juice
  • 2 cups walnuts broken in small pieces

place cherries in a 13×9, top with pineapple (with the juice), sprinkle with sugar, sprinkle with dry cake mix,pour butter on top add nuts DO NOT MIX

bake at 350 for 45 mins or until golden brown

Ambrosia Salad

Standard
  • 2 cans fruit cocktail (in juice)
  • 1 can pineapple chunks (in juice)
  • 2 cups mini marshmallows (colored ones are fun)
  • 2 cups fat free vanilla yogurt
  • 1 small container cool whip
  • 1 cup chopped walnuts

drain juice from all fruit into large bowl, stir in marshmallow and let sit for 20 minutes (until they get fluffy) drain excess juice and fold in remaining ingredients and chill overnight

WW 2pt White Chicken Chili

Standard

This is a weight watchers recipe. It is 2 points per 1 cup serving.

 

  • 1 lb chicken boneless skinless chicken breast
  • 2-19oz jars picante sauce (one mild one medium)
  • 1-49oz fat free chicken broth
  • 1-48oz jar great northern beans
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp cayenne or chili powder
  • salt and pepper to taste

boil chicken breasts in water seasoned with salt and pepper, cool slightly and shred meat. Discard water. Combine all ingredients in a stockpot bring to boil and reduce to simmer for 1 hour.

 

can be served with low fat cheese and fat free sour cream (just be sure to add the points if you are dieting)

Margarita Salmon

  • 1/2 cup frozen margarita mix (mix the rest with tequila and have a cocktail while cooking)
  • 2 tbls. honey
  • 2-3lbs piece of salmon
  • 1 teaspoon of dill

mix honey and margarita mix. 10 minutes before cooking pour 3/4 of the margarita mixture over the fish to marinade and sprinkle with dill.  Remove fish from marinade (discard marinade) and place on med heat grill and cook covered for 8 minutes (no peeking) brush with remaining marinade until to cooked through.

Crockpot Italian Chicken

  • 6 chicken breasts
  • 1 envelope good seasons zesty italian dressing
  • 1/2 cup water
  • 8oz package cream cheese
  • 1 can cream of chicken soup
  • 1 can of mushroom pieces drained

place chicken in bottom of crockpot. combine dressing mix and water, pour over chicken and cook on low for three hours. Mix soup, cream cheese, mushrooms and pour over chicken and continue to cook on low for 1 more hour or until done. Serve over egg noodles with a side of broccoli
