Brown Sugar Bacon

  • 1 pound thick bacon slices
  • 1 1/2 cups firmly packed dark brown sugar


  1. Arrange bacon in a single layer in an aluminum foil-lined and parchment paper lined cookie sheet.
  2.  Cover evenly with brown sugar.
  3. Bake at 425° for 25 minutes or until done.
  4. let stand 2 to 3 minutes or until sugar is set.

Black Pepper – Brown Sugar Bacon Variation:

  1.  Press 1/4 cup cracked black pepper onto bacon slices before covering with brown sugar.
  2. Proceed with recipe above.

Trail Mix Treats

  • 3 tbls butter
  • 2 cups mini marshmallows
  • 1/2 cup crunchy peanut butter
  • 1 tsp vanilla
  • 2 cups rice krispy cereal
  • 1 cup old fashion rolled oats
  • 1/2 cup dried fruit, cranberries or cherries
  • 1/2 cup sunflower seeds
  1. in large saucepan, melt butter, add marshmallows and stir until completely melted. Remove from heat add peanut butter and vanilla mix well.
  2. add cereal, oats, fruit,and seeds stir until completely coated
  3. press into a muffin tin to make 20 individual servings, cool completely and store tightly wrapped

Exploding Coffee Cake


This is a Paula Deen recipe that I have renamed because it became a oozing blob that took over my kitchen counter after I allowed it to rise overnight. I was not familiar with how quickly the frozen bread dough actually rises! It is delicious and worth every calorie.

  • 15 frozen Rhodes rolls
  • 1 – 3 oz pkg butterscotch pudding mix, NOT INSTANT
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts
  • 1 stick butter, melted
  1. the night before serving place frozen rolls in a greased bundt pan
  2. sprinkle with pudding, brown sugar and nuts
  3. pour butter over top
  4. cover tightly with greased plastic wrap and a drap with a kitchen towel
  5. let rise 6 to 8 hours
  6. bake at 350 degrees for 30 mins
  7. let cool for 5 mins in pan and turn out onto serving platter

Maple Ham & Egg Cups


1 Tbls melted butter
6 slices deli ham
1 Tbls maple syrup
6 eggs
1 tsp butter cut into six equal pieces
**english muffins, toast or biscuits

preheat oven to 400 degrees

brush a muffin tin with melted butter, line with slice of hame and brush with maple syrup, add one pat of butter, crack egg in each muffin tin and season with salt and pepper.

Bake for 15-20 mins until set, twist to remove from muffin tin serve over bread of choice.

Paula Deen’s Ultimate Coffee Cake

  • 16-18 unbaked frozen dinner rolls (I use 14 rolls with a regular size Bundt pan, otherwise it will ‘overflow’) 
  • 1 (3 ounce) package regular butterscotch pudding mix (NOT INSTANT)
  • 1/2 cup brown sugar, packed
  • 1/2 cup pecans, chopped
  • 1/2 cup butter, melted 


  1. The night before place frozen rolls in well greased bundt pan.
  2. Sprinkle dry pudding mix over rolls, sprinkle brown sugar over pudding mix, sprinkle chopped pecans over brown sugar, pour melted butter over all.
  3. To prevent dough from forming a hard crust while it’s rising overnight, cover with a damp towel or tightly wrap with plastic wrap. Let rise overnight at room temperature about 8 to 10 hours.
  4. Preheat oven to 350 degrees.
  5. Bake in oven for 30 minutes. Remove from oven and allow to cool for 5 minutes. Turn pan over onto a serving platter to remove. Serve by pulling apart chunks with forks.
  6. Enjoy!

Easy Breakfast Casserole



  1. Preheat oven to 350F and lightly grease a 9 x 12 baking dish.
  2. Mix all the ingredients together.
  3. Pour into prepared baking dish.
  4. Bake for about 45-50 minutes or until set.
